Portabella Mushroom Pizza

4 medium portabella mushrooms, stems removed.

1/2 cup low-carb pizza sauce/tomato sauce

1 ounce mozzarella cheese

1 ounce cheddar or colbyjack cheese

Olive Oil

Italian Seasoning

This is a very versatile dish, you can try it with so many of your favorite low-carb toppings:

  • beef, sausage, canadian bacon,pepperoni, chicken

  • tomato, teriyaki, garlic and cream cheese sauces


The portabella mushroom is used as the crust, remove the stem and place on baking dish upside down (gills facing up). Sprinkle each mushroom with about 1 to 2 tbsp of olive oil, spread 2 tbsp of your favorite low-carb sauce over the gills, add 1/4 of the grated mozzarella cheese, your favorite low-carb toppings, and 1/4 of the remaining cheese. Bake at 425 for 8-10 minutes or until cheese is golden brown.

1/2 cup of portabella is 1 gram carb. Approx. = 1 med.-sm. cap
most meats & cheeses = 0 grams carb, watch the carbs on the sauces. Adding veggies also increase carbs.

Makes 4 individual mini pizza's
